Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and black pepper, to taste
  • Optional:
    • 1 clove garlic, minced
    • 1/2 teaspoon paprika
    • 1/4 cup sour cream

Instructions

  1. Preheat the Oven: Set oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the Beef: Brown ground beef in a skillet over medium-high heat (5–7 minutes). Add onion (and garlic, if using), cook 2–3 minutes until fragrant. Season with salt and pepper; drain excess grease.
  3. Prepare Potatoes: Wash, peel (if desired), and slice potatoes thinly (1/8-inch thick).
  4. Assemble Casserole: Layer cooked beef in the baking dish. Arrange potato slices on top.
  5. Make Sauce: Whisk soup, milk, and sour cream (if using) in a bowl. Pour over potatoes.
  6. Add Cheese: Sprinkle cheddar cheese evenly over the top.
  7. Bake: Cover with foil; bake for 45 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly and potatoes are tender.
  8. Serve: Let cool for 5–10 minutes before serving. Optional garnish: chopped parsley.
