Ingredients
- 2 cups unsweetened almond milk (or milk of choice)
- 1 cup plain Greek yogurt (unsweetened)
- 1/2 cup shelled pistachio nuts
- 1/4 cup protein powder (vanilla or unflavored)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
1. Blend the Pistachios:
- In a blender or food processor, finely chop or blend pistachios until slightly pasty.
2. Mix the Wet Ingredients:
- In a large bowl, whisk together almond milk, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth.
3. Add Pistachios & Protein Powder:
- Stir in blended pistachios and protein powder until fully incorporated.
4. Chill the Mixture:
- With an ice cream maker: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Without an ice cream maker: Pour the mixture into a shallow dish and freeze, stirring every 30 minutes for 2-3 hours to prevent ice crystals.
5. Serve & Enjoy:
- Once the ice cream reaches your desired consistency, scoop and serve in a bowl or cone.

- Storage: Store in an airtight container in the freezer for up to 2 weeks.
- Softening: Let sit at room temperature for 5-10 minutes before scooping.
