Description

These Healthy Chocolate Chip Oatmeal Bars are thick, chewy, and made with wholesome ingredients! Perfect as a sweet dessert or nutritious snack, they’re easy to make, packed with flavor, and topped with flaky sea salt for the ultimate treat.


Ingredients

  • 2 cups quick cooking oats
  • 1 teaspoon baking powder
  • 1 egg
  • ¾ cup nut butter (almond, peanut, or cashew)
  • ¾ cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • ¾ cup dark or semi-sweet chocolate chips
  • Flaky sea salt, for topping

Instructions

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  • In a large bowl, combine the oats and baking powder.
  • In a separate bowl, whisk the egg, then mix in nut butter, maple syrup (or honey), and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until fully combined.
  • Fold in ½ cup of the chocolate chips.
  • Spread the mixture evenly in the prepared baking dish and sprinkle the remaining ¼ cup of chocolate chips on top.
  • Bake for 30 minutes or until the edges are golden brown.
  • Remove from the oven and sprinkle flaky sea salt on top immediately.
  • Let the bars cool completely before slicing into 9 pieces. Enjoy!
