These Healthy Chocolate Chip Oatmeal Bars are thick, chewy, and made with wholesome ingredients! Perfect as a sweet dessert or nutritious snack, they’re easy to make, packed with flavor, and topped with flaky sea salt for the ultimate treat.
Ingredients
- 2 cups quick cooking oats
- 1 teaspoon baking powder
- 1 egg
- ¾ cup nut butter (almond, peanut, or cashew)
- ¾ cup pure maple syrup or honey
- 1 teaspoon vanilla extract
- ¾ cup dark or semi-sweet chocolate chips
- Flaky sea salt, for topping
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine the oats and baking powder.
- In a separate bowl, whisk the egg, then mix in nut butter, maple syrup (or honey), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until fully combined.
- Fold in ½ cup of the chocolate chips.
- Spread the mixture evenly in the prepared baking dish and sprinkle the remaining ¼ cup of chocolate chips on top.
- Bake for 30 minutes or until the edges are golden brown.
- Remove from the oven and sprinkle flaky sea salt on top immediately.
- Let the bars cool completely before slicing into 9 pieces. Enjoy!
