Ingredients
- 1 ½ cups unsweetened finely shredded coconut
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup (or honey for non-vegan)
- 1 tsp vanilla extract
- Pinch of sea salt
- 12 raw almonds
- ¾ cup chocolate chips or chopped chocolate bar
Instructions

In a food processor, blend shredded coconut, melted coconut oil, maple syrup, vanilla extract, and sea salt until sticky and cohesive. - Form the Base:
Divide the coconut mixture evenly into a mini muffin tin, pressing down firmly to form solid bases. - Melt Chocolate:
In a microwave-safe bowl, melt chocolate chips with a teaspoon of coconut oil, stirring every 30 seconds until smooth. Alternatively, use a double boiler. - Assemble Bites:
Spoon melted chocolate over each coconut base, covering completely. Top each with a raw almond. - Set:
Freeze the bites for 3-4 hours or until firm. Remove from the muffin tin and store.
