Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder (optional for extra heat)
- 1/2 cup chicken broth
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 10 minutes, stirring occasionally, until softened and slightly browned.
- Add chopped onion and bell pepper to the skillet and cook for 5 more minutes, until softened.
- Push vegetables to the side and add ground turkey. Break apart with a spoon and cook until browned, 6-8 minutes.
- Add minced garlic, ground cumin, smoked paprika, salt, pepper, and chili powder. Stir to coat the turkey and vegetables with spices.
- Pour in chicken broth, stir to combine, and let simmer for another 5 minutes, allowing sweet potatoes to finish cooking.
- Taste and adjust seasoning as needed. Garnish with fresh parsley and serve immediately.
