Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder (optional for extra heat)
  • 1/2 cup chicken broth
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 10 minutes, stirring occasionally, until softened and slightly browned.
  • Add chopped onion and bell pepper to the skillet and cook for 5 more minutes, until softened.
  • Push vegetables to the side and add ground turkey. Break apart with a spoon and cook until browned, 6-8 minutes.
  • Add minced garlic, ground cumin, smoked paprika, salt, pepper, and chili powder. Stir to coat the turkey and vegetables with spices.
  • Pour in chicken broth, stir to combine, and let simmer for another 5 minutes, allowing sweet potatoes to finish cooking.
  • Taste and adjust seasoning as needed. Garnish with fresh parsley and serve immediately.

  • For extra greens, add spinach or kale in the last few minutes of cooking.
