Ingredients
- 2 teaspoons olive oil
- 1 pound 93% lean ground turkey
- 3 medium carrots, sliced
- 1 yellow bell pepper, chopped
- 1 small yellow onion, diced
- 2 celery stalks, chopped
- 1 (4.5 oz.) can green chiles
- 6 cups reduced sodium chicken broth
- 1 cup milk
- 1 package Knorr® Selects Spinach & Artichoke Rice
Instructions
- Cook the Ground Turkey:
- Heat 1 teaspoon of olive oil in a Dutch oven over medium-high heat.
- Add the ground turkey and cook until fully done.
- Drain excess fat, remove from the pan, and set aside.
- Sauté the Vegetables:
- In the same pot, heat the remaining teaspoon of olive oil.
- Add carrots, bell pepper, onion, and celery.
- Cook, stirring occasionally, until vegetables are tender.
- Combine Ingredients:
- Return the cooked ground turkey to the pot with vegetables.
- Stir in the green chiles, chicken broth, and milk.
- Add the Rice:
- Whisk in the Knorr® Selects Spinach & Artichoke Rice.
- Bring the mixture to a boil.
- Simmer:
- Reduce heat to low, cover, and cook for about 10 minutes, or until rice is tender.
- Serve:
- Ladle into bowls and enjoy warm.
