Description

Ground Turkey and Rice Soup is a hearty, nutritious meal made with lean ground turkey, fresh vegetables, and seasoned rice. This comforting soup is rich in flavor, easy to make, and perfect for a quick and satisfying dinner.

 


Ingredients

  • 2 teaspoons olive oil
  • 1 pound 93% lean ground turkey
  • 3 medium carrots, sliced
  • 1 yellow bell pepper, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 1 (4.5 oz.) can green chiles
  • 6 cups reduced sodium chicken broth
  • 1 cup milk
  • 1 package Knorr® Selects Spinach & Artichoke Rice

Instructions

  1. Cook the Ground Turkey:
    • Heat 1 teaspoon of olive oil in a Dutch oven over medium-high heat.
    • Add the ground turkey and cook until fully done.
    • Drain excess fat, remove from the pan, and set aside.
  2. Sauté the Vegetables:
    • In the same pot, heat the remaining teaspoon of olive oil.
    • Add carrots, bell pepper, onion, and celery.
    • Cook, stirring occasionally, until vegetables are tender.
  3. Combine Ingredients:
    • Return the cooked ground turkey to the pot with vegetables.
    • Stir in the green chiles, chicken broth, and milk.
  4. Add the Rice:
    • Whisk in the Knorr® Selects Spinach & Artichoke Rice.
    • Bring the mixture to a boil.
  5. Simmer:
    • Reduce heat to low, cover, and cook for about 10 minutes, or until rice is tender.
  6. Serve:
    • Ladle into bowls and enjoy warm.
