Ingredients
For the Salmon:
- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt and pepper to taste
For the Bowl:
- 2 cups kale, chopped
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup mango slices
- 1 tbsp olive oil (for the kale)
- Salt and pepper to taste
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare the Salmon:
Rub the salmon with olive oil, lemon juice, paprika, garlic powder, salt, and pepper. - Cook the Salmon:
Heat a grill or grill pan over medium heat. Cook salmon for 4–5 minutes per side, until flaky and cooked through. - Massage the Kale:
Toss the kale with olive oil and a pinch of salt. Massage for 2–3 minutes to soften. - Assemble the Bowls:
Divide the kale between two bowls. Top with salmon, avocado, cherry tomatoes, and mango. - Make the Dressing:
Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Drizzle over the bowls.
