Description

Ingredients

For the Salmon:

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

For the Bowl:

  • 2 cups kale, chopped
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup mango slices
  • 1 tbsp olive oil (for the kale)
  • Salt and pepper to taste

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Salmon:
    Rub the salmon with olive oil, lemon juice, paprika, garlic powder, salt, and pepper.
  2. Cook the Salmon:
    Heat a grill or grill pan over medium heat. Cook salmon for 4–5 minutes per side, until flaky and cooked through.
  3. Massage the Kale:
    Toss the kale with olive oil and a pinch of salt. Massage for 2–3 minutes to soften.
  4. Assemble the Bowls:
    Divide the kale between two bowls. Top with salmon, avocado, cherry tomatoes, and mango.
  5. Make the Dressing:
    Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Drizzle over the bowls.
