Grilled corn on the cob is a quintessential summer dish, made irresistible with a creamy, tangy spicy mayo. This smoky, flavorful side dish is perfect for barbecues, family dinners, or any outdoor gathering. Customize the spice level and toppings to make it your own!

Ingredients

  • 4 ears of corn, husked and silked

For the Spicy Mayo:

  • 1/2 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1/2 lime, juiced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Preheat the Grill: Set your grill to medium-high heat.
  • Grill the Corn: Place the corn directly on the grill grates. Turn occasionally, grilling for 10-15 minutes, until the kernels are charred and tender.
  • Prepare the Spicy Mayo: In a small bowl, combine mayonnaise, Sriracha sauce, lime juice, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • Serve: Drizzle the spicy mayo over the hot grilled corn and serve immediately.

Notes

  • For extra flavor, add toppings like cotija cheese, fresh cilantro, or smoked paprika.
  • To make a vegan version, substitute the mayonnaise with vegan mayo.
