Description

Ingredients

  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 1/4 cups granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips
  • 1/2 tsp flaky sea salt

Instructions

  • Line an 8×8-inch baking dish with parchment paper and lightly grease it.
  • Heat the heavy cream and butter in a small saucepan over medium heat until smooth. Remove from heat.
  • In a large saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring occasionally, until sugar dissolves.
  • Increase heat to high and cook without stirring until golden brown (8-10 minutes).
  • Slowly add the cream mixture, stirring constantly as the mixture bubbles up.
  • Cook over medium heat until the mixture reaches 245°F (118°C) on a candy thermometer.
  • Remove from heat and stir in vanilla extract and dark chocolate chips until smooth.
  • Pour into the prepared baking dish, spread evenly, and sprinkle with sea salt.
  • Cool completely at room temperature, then cut into 36 squares.
