Ingredients
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 1/4 cups granulated sugar
- 1/4 cup light corn syrup
- 1/4 cup water
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
- 1/2 tsp flaky sea salt
Instructions
- Line an 8×8-inch baking dish with parchment paper and lightly grease it.
- Heat the heavy cream and butter in a small saucepan over medium heat until smooth. Remove from heat.
- In a large saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring occasionally, until sugar dissolves.
- Increase heat to high and cook without stirring until golden brown (8-10 minutes).
- Slowly add the cream mixture, stirring constantly as the mixture bubbles up.
- Cook over medium heat until the mixture reaches 245°F (118°C) on a candy thermometer.
- Remove from heat and stir in vanilla extract and dark chocolate chips until smooth.
- Pour into the prepared baking dish, spread evenly, and sprinkle with sea salt.
- Cool completely at room temperature, then cut into 36 squares.
