Gluten-Free Cinnamon Coffee Cake is a moist and buttery treat with a rich cinnamon swirl and crumbly streusel topping. Made with almond and oat flours, this easy-to-make cake is perfect for breakfast, brunch, or dessert.

Ingredients

  • For the Cake Batter:
    • ½ cup unsalted butter, softened
    • ½ cup applesauce
    • 2 large eggs
    • ½ cup white sugar
    • ½ tsp vanilla extract
    • 1 ½ cups almond flour
    • ¾ cup oat flour
    • 2 tsp baking powder
    • ¼ tsp salt
  • For the Cinnamon Sugar Filling:
    • 2 tbsp melted butter
    • ¼ cup oat flour
    • ⅓ cup white sugar
    • 2 tsp ground cinnamon
  • For the Crumble Topping:
    • ⅓ cup light brown sugar
    • ½ cup almond flour
    • ¼ cup oat flour
    • 1 tsp ground cinnamon
    • 2 tbsp unsalted butter, room temperature

Instructions

  1. Prepare the Cake Batter:
In a large bowl, mix butter, applesauce, eggs, sugar, and vanilla until smooth. Add almond flour, oat flour, baking powder, and salt; stir until combined.
  2. Make the Cinnamon Sugar Filling:
In a bowl, mix melted butter, oat flour, sugar, and cinnamon until uniform.
  3. Prepare the Crumble Topping:
Combine brown sugar, almond flour, oat flour, cinnamon, and butter. Mix with hands or a fork until crumbly.
  4. Assemble the Cake:
Grease or line an 8×8-inch baking dish. Spread half the cake batter evenly. Sprinkle half the cinnamon sugar filling over the batter and gently swirl. Repeat with the remaining batter and filling.
  5. Bake the Cake:
Preheat the oven to 350°F (175°C). Bake for 25 minutes.
  6. Add the Crumble Topping:
Remove the cake, sprinkle the crumble topping, and press lightly into the surface. Return to the oven and bake for an additional 18 minutes.
  7. Cool and Serve:
Let the cake cool completely before slicing into squares.
