  • 1 tsp fresh grated ginger (optional)
  • 1 1/4 cups all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Cream Cheese Icing:

  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat Oven: Preheat to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  • Wet Ingredients: Whisk melted butter, brown sugar, and molasses. Add egg, vanilla, and grated ginger, mixing until smooth.
  • Dry Ingredients: Sift flour, ground ginger, cinnamon, allspice, cloves, baking powder, and salt in a separate bowl.
  • Combine Batter: Gradually fold dry ingredients into wet ingredients until just combined. Avoid overmixing.
  • Bake: Pour batter into the prepared pan and bake for 20-30 minutes. The edges should set, and the center should remain slightly gooey.
  • Prepare Icing: Beat softened butter and cream cheese until smooth. Add powdered sugar, cinnamon, vanilla, and salt, then beat until fluffy.
  • Frost: Once cooled, spread frosting over blondies, sprinkle with cinnamon sugar if desired, and slice into squares.
