Ingredients

  • 4 cod fillets (6 oz each)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Marinade: In a small bowl, whisk soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil.
  2. Marinate the Cod: Coat cod fillets with marinade in a shallow dish. Refrigerate for 30-60 minutes.
  3. Preheat the Oven: Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Bake the Cod: Arrange cod on the baking sheet, brush with leftover marinade, and bake for 12-15 minutes.
  5. Prepare the Glaze: Simmer remaining marinade in a saucepan for 3-5 minutes until thickened.
  6. Glaze and Garnish: Brush thickened glaze over baked cod, garnish with green onions, sesame seeds, and cilantro. Serve with lime wedges.

Notes

  • For a spicier dish, add Sriracha or red pepper flakes to the marinade.
  • Use tamari for a gluten-free version.
  • Halibut or tilapia are excellent substitutes for cod.
