Ingredients

  • 2½ cups cake flour
  • ¾ cup margarine or butter (softened)
  • 1 large egg
  • 2 tablespoons sugar (for coating)
  • ¼ cup molasses or honey
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons ground ginger
  • 1 tablespoon water
  • ¾ teaspoon cinnamon
  • 1 cup sugar

Instructions

  • Preheat the oven to 180°C (350°F). Set aside 2 tablespoons of sugar for coating.
  • Sift together cake flour, ground ginger, cinnamon, and salt in a bowl.
  • In a separate large bowl, beat the margarine and sugar together until light and fluffy.
  • Beat in the egg, then stir in molasses and water until fully combined.
  • Gradually add the sifted dry ingredients into the butter and molasses mixture, mixing until fully incorporated.
  • Shape the dough into small balls and roll each one in the reserved sugar until coated.
  • Place the coated dough balls on a baking pan and flatten each slightly with the bottom of a glass or cookie cutter.
  • Bake for 10 to 15 minutes, or until golden brown and firm to the touch.
