Ingredients
- 2½ cups cake flour
- ¾ cup margarine or butter (softened)
- 1 large egg
- 2 tablespoons sugar (for coating)
- ¼ cup molasses or honey
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoons ground ginger
- 1 tablespoon water
- ¾ teaspoon cinnamon
- 1 cup sugar
Instructions
- Preheat the oven to 180°C (350°F). Set aside 2 tablespoons of sugar for coating.
- Sift together cake flour, ground ginger, cinnamon, and salt in a bowl.
- In a separate large bowl, beat the margarine and sugar together until light and fluffy.
- Beat in the egg, then stir in molasses and water until fully combined.
- Gradually add the sifted dry ingredients into the butter and molasses mixture, mixing until fully incorporated.
- Shape the dough into small balls and roll each one in the reserved sugar until coated.
- Place the coated dough balls on a baking pan and flatten each slightly with the bottom of a glass or cookie cutter.
- Bake for 10 to 15 minutes, or until golden brown and firm to the touch.
