Ingredients

  • 2 lbs potatoes (Russet or Yukon Gold), peeled and grated
  • 1 small onion, finely grated
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt

  • 1/4 teaspoon nutmeg (optional)

Instructions

  • Grate and prepare: Peel and grate the potatoes and onion using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel.
  • Mix the batter: In a large bowl, combine grated potatoes and onion with eggs, flour, salt, pepper, and nutmeg. Mix thoroughly.
  • Heat the oil: Add 1/4 inch of vegetable oil to a large skillet and heat over medium-high heat.
  • Cook the pancakes: Use 1/4 cup of batter for each pancake. Flatten into a round and fry in hot oil for 3-4 minutes per side, until golden brown. Cook in batches to avoid overcrowding.
  • Drain and serve: Remove pancakes from the skillet, drain on paper towels, and sprinkle with salt while hot. Serve with applesauce, sour cream, or your preferred topping.
