Perfect as a side dish, appetizer, or snack, they pair wonderfully with applesauce or sour cream for a classic German touch. These versatile and easy-to-make pancakes will bring authentic flavor to your table.
Ingredients
- 2 lbs potatoes (Russet or Yukon Gold), peeled and grated
- 1 small onion, finely grated
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Vegetable oil for frying
- Applesauce or sour cream (for serving)
Instructions
- Grate and prepare: Peel and grate the potatoes and onion using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel.
- Mix the batter: In a large bowl, combine grated potatoes and onion with eggs, flour, salt, pepper, and nutmeg. Mix thoroughly.
- Heat the oil: Add 1/4 inch of vegetable oil to a large skillet and heat over medium-high heat.
- Cook the pancakes: Use 1/4 cup of batter for each pancake. Flatten into a round and fry in hot oil for 3-4 minutes per side, until golden brown. Cook in batches to avoid overcrowding.
- Drain and serve: Remove pancakes from the skillet, drain on paper towels, and sprinkle with salt while hot. Serve with applesauce, sour cream, or your preferred topping.
Notes
- For crispier pancakes, ensure the grated potatoes and onion are well-drained.
- Add herbs like parsley or dill for a fresh flavor twist.
- Leftovers can be reheated in a skillet or oven to maintain crispness.
