Ingredients

  • 3 medium tomatoes, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 medium cucumber, finely chopped
  • 1 small white onion, finely chopped
  • A handful of fresh parsley, finely chopped
  • 50g (about 1/3 cup) walnuts, coarsely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp pomegranate molasses
  • 1 tsp sumac
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the chopped tomatoes, green bell pepper, cucumber, white onion, and parsley.
  2. Add the coarsely chopped walnuts to the vegetable mixture.
  3. In a separate small bowl, whisk together olive oil, pomegranate molasses, sumac, salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad and toss gently to coat evenly.
  5. Optional: Refrigerate the salad for 30 minutes to let the flavors meld before serving.

Notes
