Ingredients
- 3 medium tomatoes, finely chopped
- 1 green bell pepper, finely chopped
- 1 medium cucumber, finely chopped
- 1 small white onion, finely chopped
- A handful of fresh parsley, finely chopped
- 50g (about 1/3 cup) walnuts, coarsely chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp pomegranate molasses
- 1 tsp sumac
- Salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the chopped tomatoes, green bell pepper, cucumber, white onion, and parsley.
- Add the coarsely chopped walnuts to the vegetable mixture.
- In a separate small bowl, whisk together olive oil, pomegranate molasses, sumac, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss gently to coat evenly.
- Optional: Refrigerate the salad for 30 minutes to let the flavors meld before serving.
