Ingredients

  • 2 chicken breasts, cubed
  • 2 ribeye steaks, cubed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

For the Cheesy Loaded Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup cooked beef, crumbled
  • 2 green onions, chopped
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Prepare the Potatoes:
    • Boil peeled and cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain and set aside.
  • Cook the Chicken & Steak:
    • Heat olive oil in a large skillet over medium-high heat.
    • Cook the cubed chicken and steak until browned and fully cooked (about 5-7 minutes).
    • Add minced garlic, Italian seasoning, salt, and pepper.
    • Stir in grated Parmesan cheese and cook for another minute. Remove from heat.
  • Make the Mashed Potatoes:
    • Mash drained potatoes with butter, heavy cream, salt, and pepper until smooth.
    • Stir in cheddar cheese, mozzarella cheese, cooked beef, and green onions. Mix well.
  • Assemble and Bake:
    • Preheat oven to 375°F (190°C).
    • Spread mashed potatoes in a baking dish and top with the cooked chicken and steak mixture.
    • Bake for 15 minutes or until heated through.
  • Garnish and Serve:
