Description

Ingredients

1 medium cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups mushrooms, sliced

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the oven for 20-25 minutes, or until tender and slightly golden.
  4. While the cauliflower is roasting, heat a large skillet over medium heat and add the sliced mushrooms.
  5. Cook the mushrooms for 5-7 minutes, or until they release their moisture and become golden.
  6. Add the minced garlic to the skillet with the mushrooms and sauté for an additional 1-2 minutes, or until fragrant.
  7. Once the cauliflower is roasted, remove it from the oven and add it to the skillet with the mushrooms and garlic. Stir well to combine.
  8. Garnish with fresh parsley, if desired, and serve immediately.

Notes

Add a sprinkle of nutritional yeast to the roasted cauliflower for a cheesy, plant-based twist.

For a spicy kick, add a pinch of cayenne pepper or red pepper flakes along with the garlic powder.

You can swap out the mushrooms for other vegetables, such as zucchini or bell peppers, depending on your preference.

If you’re not vegan, a sprinkle of grated Parmesan cheese on top before serving can add a creamy, savory element.
