Ingredients

  • pounds russet potatoes, diced into ½-inch cubes
  • 1 pound smoked Polish sausage, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • ½ large red bell pepper, diced
  • ½ large green bell pepper, diced
  • 1 small onion, diced
  • Black pepper, to taste
  • Shredded Parmesan cheese, for garnish (optional)

Instructions

  • Sauté the Onion:
    • Heat 1 tablespoon of butter in a large skillet over medium heat.
    • Add diced onion and sauté until translucent. Remove and set aside.
  • Cook the Potatoes:
    • In the same skillet, add 1 tablespoon of butter and 1 tablespoon of olive oil.
    • Add diced potatoes, seasoned salt, Italian seasoning, and black pepper.
    • Cover and cook for 15 minutes, stirring occasionally, until slightly tender.
  • Add Sausage and Peppers:
    • Add sliced smoked sausage, red bell pepper, and green bell pepper.
    • Cook uncovered for 10 minutes, stirring occasionally, until sausage is heated through and peppers are tender.
  • Combine and Serve:
    • Return sautéed onions to the skillet and stir to combine.
    • Cook for an additional 2–3 minutes.
    • Optionally, sprinkle shredded Parmesan cheese before serving.
