Ingredients

  • 8 pineapple rings
  • 1 cup pineapple juice
  • 1½ cups all-purpose flour
  • 1 (10-ounce) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk, plus extra for adjusting sauce consistency
  • Vegetable oil (for frying)
  • 4 ounces cream cheese (softened)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Soak pineapple rings in pineapple juice for 1 hour. Drain and pat dry.
  • Prepare coating stations: one with flour, one with coconut flakes, and one with whisked eggs and coconut milk.
  • Dip pineapple rings in flour, egg mixture, and coconut flakes for an even coating.
  • Fry in vegetable oil heated to 350°F (175°C) until golden, about 1 minute per side. Drain on paper towels.
  • For dipping sauce, mix cream cheese and powdered sugar until smooth. Add vanilla and coconut milk gradually to reach desired consistency.
  • Serve fried pineapple rings warm with the creamy coconut sauce.
