Description

Flourless Orange Cake is a gluten-free dessert that combines whole oranges with almond meal to deliver an intense citrus flavor and moist texture. Perfect for any occasion, it’s naturally dairy-free and simple to prepare.

 


Ingredients

  • 2 medium or large oranges
  • 6 large eggs
  • 1 cup (220g) caster sugar
  • 2 ⅓ cups (250g) almond meal
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  • Prepare Oranges: Place whole oranges in a saucepan, cover with water, and simmer for 1-2 hours until soft. Drain and cool.
  • Preheat Oven: Heat oven to 160°C (320°F). Grease and line a 20 cm (8-inch) round cake tin.
  • Process Oranges: Quarter cooled oranges, remove seeds, and puree in a food processor.
  • Mix Wet Ingredients: In a bowl, whisk eggs and sugar until combined. Stir in orange puree and vanilla.
  • Combine Dry Ingredients: Mix almond meal and baking powder in a separate bowl, then fold into the orange mixture.
  • Bake: Pour batter into the prepared tin. Bake for 60-70 minutes, or until a skewer inserted into the center comes out clean.
  • Cool: Allow cake to cool in the tin before transferring to a wire rack.
