  • ½ teaspoon instant yeast
  • 1 ½ cups water, at room temperature
  • 2 tablespoons cornmeal

Instructions

  1. In a large bowl, combine flour, garlic, rosemary, salt, pepper, and yeast.
  2. Mix in water using a wooden spoon or hand until a wet, sticky dough forms (about 30 seconds).
  3. Cover the bowl with plastic wrap and let it rest at room temperature for 18–24 hours until bubbles form on the surface.
  4. Lightly oil a 10-inch cast iron skillet or coat it with nonstick spray. Sprinkle cornmeal in the skillet.
  5. On a floured surface, gently shape the dough into a round and place it into the prepared skillet. Cover with a clean towel and let rise at room temperature for 2 hours, or until doubled in size.
  6. Preheat oven to 450°F (232°C).
  7. Bake for 30–40 minutes or until the bread is golden brown.
  8. Let the bread cool before slicing and serving.

  • For a more pronounced herb flavor, add extra rosemary or experiment with thyme or oregano.
