Ingredients
- 3 cups all-purpose flour
- 3 cloves garlic, minced
- 1 tablespoon finely chopped fresh rosemary (or more to taste)
- 1 ¼ teaspoons kosher salt
- ¾ teaspoon freshly ground black pepper
- ½ teaspoon instant yeast
- 1 ½ cups water, at room temperature
- 2 tablespoons cornmeal
Instructions
- In a large bowl, combine flour, garlic, rosemary, salt, pepper, and yeast.
- Mix in water using a wooden spoon or hand until a wet, sticky dough forms (about 30 seconds).
- Cover the bowl with plastic wrap and let it rest at room temperature for 18–24 hours until bubbles form on the surface.
- Lightly oil a 10-inch cast iron skillet or coat it with nonstick spray. Sprinkle cornmeal in the skillet.
- On a floured surface, gently shape the dough into a round and place it into the prepared skillet. Cover with a clean towel and let rise at room temperature for 2 hours, or until doubled in size.
- Preheat oven to 450°F (232°C).
- Bake for 30–40 minutes or until the bread is golden brown.
- Let the bread cool before slicing and serving.
Notes
- For a more pronounced herb flavor, add extra rosemary or experiment with thyme or oregano.
- Adding ½ cup of shredded cheese or ¼ cup of chopped olives can elevate the flavor.
- Ensure the skillet is well-oiled and sprinkled with cornmeal to prevent sticking.
