- 1 large eggplant, peeled and thinly sliced
- 2 eggs, beaten
- 1 ½ cups Italian seasoned bread crumbs
- 2 cups spaghetti sauce
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon dried basil
Instructions
- Preheat Oven – Set the oven to 350°F (175°C).
- Bread the Eggplant – Dip each slice into beaten eggs, then coat with Italian seasoned bread crumbs.
- Bake the Eggplant – Place slices on a baking sheet and bake for 5 minutes per side, until lightly browned.
- Assemble the Dish – In a 9×13-inch baking dish, spread a layer of spaghetti sauce. Add a layer of eggplant slices, then sprinkle mozzarella and Parmesan cheese. Repeat layers, finishing with cheese and dried basil on top.
