  • 1 large eggplant, peeled and thinly sliced
  • 2 eggs, beaten
  • 1 ½ cups Italian seasoned bread crumbs
  • 2 cups spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried basil

Instructions

  • Preheat Oven – Set the oven to 350°F (175°C).
  • Bread the Eggplant – Dip each slice into beaten eggs, then coat with Italian seasoned bread crumbs.
  • Bake the Eggplant – Place slices on a baking sheet and bake for 5 minutes per side, until lightly browned.
