Description

A comforting and satisfying meal featuring tender chicken pieces in a rich, creamy sauce served over soft egg noodles.


Ingredients

8 oz egg noodles

2 tablespoons olive oil

1 lb chicken breast, cut into bite-sized pieces

Salt and pepper, to taste

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian seasoning

1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Cook the egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook the chicken for 5-7 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let the broth simmer for 3-4 minutes to reduce slightly.
  5. Add the heavy cream, Parmesan cheese, and Italian seasoning to the skillet. Stir until the cheese is melted and the sauce is smooth.
  6. Return the cooked chicken to the skillet and stir to coat with the creamy sauce.
  7. Add the cooked egg noodles to the skillet, tossing to combine everything evenly.
  8. Let the dish simmer for 2-3 minutes, allowing the noodles to absorb some of the sauce.
  9. Garnish with fresh parsley, if desired, and serve immediately.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk.

Add vegetables like spinach, mushrooms, or peas for extra flavor.

For gluten-free, swap egg noodles for gluten-free pasta.

To reheat, warm in a skillet over low heat or microwave in 30-second intervals, adding chicken broth or milk as needed.
