A comforting and satisfying meal featuring tender chicken pieces in a rich, creamy sauce served over soft egg noodles.
Ingredients
8 oz egg noodles
2 tablespoons olive oil
1 lb chicken breast, cut into bite-sized pieces
Salt and pepper, to taste
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1 tablespoon fresh parsley, chopped (optional)
Instructions
- Cook the egg noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook the chicken for 5-7 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let the broth simmer for 3-4 minutes to reduce slightly.
- Add the heavy cream, Parmesan cheese, and Italian seasoning to the skillet. Stir until the cheese is melted and the sauce is smooth.
- Return the cooked chicken to the skillet and stir to coat with the creamy sauce.
- Add the cooked egg noodles to the skillet, tossing to combine everything evenly.
- Let the dish simmer for 2-3 minutes, allowing the noodles to absorb some of the sauce.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk.
Add vegetables like spinach, mushrooms, or peas for extra flavor.
For gluten-free, swap egg noodles for gluten-free pasta.
To reheat, warm in a skillet over low heat or microwave in 30-second intervals, adding chicken broth or milk as needed.
