Instructions
- Preheat your oven to 350°F (180°C).
- In a bowl, blend all ingredients (except shredded carrots) using a hand blender or regular blender until smooth and creamy.
- Stir in the shredded carrots until evenly distributed throughout the batter.
- Line a 7×7-inch (18×18 cm) baking pan with parchment paper, then spread the batter evenly in the pan.
- Bake for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before slicing and serving.
