Description

Ingredients

  • ¾ lb beef(about 12 slices)
  • 4 eggs
  • 1 cup diced red potatoes
  • ½ cup chopped green peppers
  • ¼ cup shredded cheddar cheese
  • Fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

  • Cut beef into 1-inch pieces and cook in a skillet over medium heat for 5-7 minutes until crispy. Drain about half the fat.
  • Add diced potatoes and chopped green peppers to the skillet. Cook for 8-10 minutes until potatoes are golden and tender.
  • Transfer the beef , potatoes, and peppers to a bowl and set aside.
  • Crack eggs into the skillet and cook for 1 minute without stirring.
  • Spoon the beef , potato, and pepper mixture around the eggs. Top with shredded cheddar cheese and cook for 1 minute until the cheese melts.
  • Remove from heat, season with salt and pepper, garnish with parsley, and serve hot.

Notes

  • Variations: Replace beef with plant-based sausage, add onions or spinach, or swap cheddar for Monterey Jack.
