Ingredients
- ¾ lb beef(about 12 slices)
- 4 eggs
- 1 cup diced red potatoes
- ½ cup chopped green peppers
- ¼ cup shredded cheddar cheese
- Fresh parsley (for garnish)
- Salt and pepper to taste
Instructions
- Cut beef into 1-inch pieces and cook in a skillet over medium heat for 5-7 minutes until crispy. Drain about half the fat.
- Add diced potatoes and chopped green peppers to the skillet. Cook for 8-10 minutes until potatoes are golden and tender.
- Transfer the beef , potatoes, and peppers to a bowl and set aside.
- Crack eggs into the skillet and cook for 1 minute without stirring.
- Spoon the beef , potato, and pepper mixture around the eggs. Top with shredded cheddar cheese and cook for 1 minute until the cheese melts.
- Remove from heat, season with salt and pepper, garnish with parsley, and serve hot.
Notes
- Variations: Replace beef with plant-based sausage, add onions or spinach, or swap cheddar for Monterey Jack.
