Ingredients
- Cookies:
- 2 1/2 cups all-purpose flour

- 1 teaspoon vanilla extract
- Icing:
- 2 cups powdered sugar
- 2–3 tablespoons milk

Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla extract; mix well.
- Gradually combine the dry ingredients with the wet ingredients until a dough forms.
- Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll out the dough on a floured surface to 1/4-inch thickness. Use cookie cutters to shape cookies and place them on prepared baking sheets.
- Bake for 8-10 minutes or until edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the icing, whisk together powdered sugar, milk, and vanilla extract until smooth. Add food coloring if desired.
- Decorate the cooled cookies with icing and allow it to set before serving.
