  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups heavy whipping cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups shredded sharp cheddar cheese (plus extra for topping)
  • 4 cups thinly sliced potatoes (about 45 medium-sized russet or Yukon Gold potatoes)
  • Chopped chives or parsley for garnish

Instructions

  • Prepare the Cheese Sauce
    • In a saucepan over medium heat, melt butter.
    • Add onion and sauté for 3 minutes until softened.
    • Stir in garlic; cook 1 minute.
    • Add flour, stirring to form a paste.
    • Gradually whisk in heavy cream.
    • Season with salt, pepper, thyme, and cayenne (if using). Cook until thickened.
    • Remove from heat; stir in cheese until smooth.
  • Assemble the Dish
    • Preheat oven to 375°F (190°C). Grease a baking dish.
    • Layer half the potatoes; pour half the cheese sauce over them. Add a layer of shredded cheese.
    • Repeat with remaining potatoes, cheese sauce, and more cheese on top.
  • Bake
    • Cover with foil; bake for 40 minutes.
    • Remove foil; sprinkle extra cheese on top.
    • Bake uncovered for 20 minutes until golden and bubbly.
  • Garnish and Serve
    • Let rest for 5-10 minutes. Garnish with chives or parsley. Serve warm.
