- 3 tablespoons butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups heavy whipping cream

- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups shredded sharp cheddar cheese (plus extra for topping)
- 4 cups thinly sliced potatoes (about 4–5 medium-sized russet or Yukon Gold potatoes)
- Chopped chives or parsley for garnish
Instructions
- Prepare the Cheese Sauce
- In a saucepan over medium heat, melt butter.
- Add onion and sauté for 3 minutes until softened.
- Stir in garlic; cook 1 minute.
- Add flour, stirring to form a paste.
- Gradually whisk in heavy cream.
- Season with salt, pepper, thyme, and cayenne (if using). Cook until thickened.
- Remove from heat; stir in cheese until smooth.
- Assemble the Dish
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Layer half the potatoes; pour half the cheese sauce over them. Add a layer of shredded cheese.
- Repeat with remaining potatoes, cheese sauce, and more cheese on top.
- Bake
- Cover with foil; bake for 40 minutes.
- Remove foil; sprinkle extra cheese on top.
- Bake uncovered for 20 minutes until golden and bubbly.
- Garnish and Serve
- Let rest for 5-10 minutes. Garnish with chives or parsley. Serve warm.
