Ingredients

  • 2 tablespoons vegetable oil or avocado oil
  • 8 ounces shiitake mushrooms, stemmed and sliced
  • 2 tablespoons tamari or soy sauce, plus more for serving
  • 6 cups vegetable broth
  • 4 garlic cloves, grated
  • 1 tablespoon grated fresh ginger
  • 1 medium carrot, julienned
  • 1 pound frozen vegetable dumplings, mini wontons, or potstickers
  • 4 scallions, thinly sliced
  • 3 cups fresh spinach
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • Sesame seeds, for garnish
  • Sichuan chili crisp or toasted sesame oil, for serving

Instructions

  • Sauté the Mushrooms: Heat oil over medium heat in a large pot. Add the shiitake mushrooms and cook for 5-8 minutes until softened.
  • Prepare the Broth: Add tamari, vegetable broth, garlic, ginger, julienned carrot, frozen dumplings, and half the sliced scallions. Stir well and bring to a boil. Reduce heat to a simmer and cook for about 4 minutes until dumplings are heated through.
  • Add Greens and Seasonings: Remove the pot from heat and stir in spinach, rice vinegar, and lime juice until the spinach wilts.
  • Serve: Taste and adjust the seasoning with extra tamari or lime juice if needed. Ladle into bowls, garnish with the remaining scallions, sesame seeds, and a drizzle of Sichuan chili crisp or toasted sesame oil.

Notes

  • You can use different types of frozen dumplings like shrimp or beef , depending on your preference.
  • Add tofu cubes or shredded chicken for extra protein.
  • For a spicier version, increase the Sichuan chili crisp or add fresh sliced chilies.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
