Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Prepare Your Workspace
    • Line a baking sheet with parchment or wax paper. If using nuts, chop them and set aside.
  • Make the Syrup
    • Combine sugar, corn syrup, and water in a heavy saucepan. Cook over medium heat, stirring until the sugar dissolves. Attach a candy thermometer and cook without stirring until the mixture reaches 250°F (hard ball stage).
  • Beat the Egg Whites
    • While the syrup is cooking, beat egg whites in a clean bowl until stiff peaks form.
  • Combine Syrup and Egg Whites
    • Once the syrup reaches 250°F, pour it in a thin stream into the egg whites while mixing at medium speed. Increase speed to high and continue beating until the candy loses its gloss and holds its shape (about 4-5 minutes).
  • Add Flavor and Shape
    • Mix in vanilla and optional nuts. Drop spoonfuls onto the prepared baking sheet using two spoons. Work quickly as the candy sets fast.
  • Cool and Store
    • Let candies cool completely before storing in an airtight container.
