Description

Deluxe Corned Beef Hash is a savory, hearty dish made with leftover corned beef, crispy potatoes, and caramelized onions, creating a satisfying meal perfect for breakfast, brunch, or dinner. Featuring tender Yukon Gold potatoes, shredded carrots for a pop of color, and aromatic herbs like parsley and thyme, this recipe is an elevated take on traditional corned beef hash. Top it with a fried or poached egg for a complete and flavorful meal. Ideal for St. Patrick’s Day or any time you want to repurpose corned beef!

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, chopped
  • 5 large Yukon Gold potatoes, peeled and cut into 1/4-inch cubes
  • 1 large carrot, coarsely shredded
  • 2 pounds cooked corned beef, cubed
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon ground black pepper (or to taste)
  • ¼ teaspoon dried thyme leaves
  • 1 pinch salt to taste

Instructions

  • Heat the Skillet: In a large skillet, heat the butter and olive oil over medium heat. Once hot, add the chopped onion and cook, stirring occasionally, until the onion is soft and lightly browned, about 5 minutes.
  • Cook the Carrots: Stir in the shredded carrot and cook for an additional 3 minutes, until tender.
  • Add Potatoes: Stir in the cubed potatoes and cook for 10-15 minutes, until the potatoes are tender and beginning to brown.
  • Incorporate the Corned Beef: Add the cubed corned beef, fresh parsley, black pepper, thyme, and salt. Stir to combine and cook until everything is heated through and the potatoes are crispy and golden brown, about 5-10 more minutes.
  • Adjust Seasoning: Taste and adjust the seasoning with additional salt or pepper if needed.
  • Serve: Serve the hash with a fried or poached egg on top for an extra layer of richness.

Notes

  • Storage: Store any leftovers in an airtight container in the fridge for up to 4 days. You can also freeze for up to 3 months, though the texture may soften upon reheating.
  • Reheating: Reheat in a skillet over medium heat for a crispy texture or in the microwave for quicker reheating.
  • Make Ahead: This dish can be prepared a day in advance and stored in the refrigerator. Reheat before serving.
