Perfect for a weeknight dinner, this easy-to-make recipe is quick, flavorful, and sure to be a crowd-pleaser. With simple ingredients and a handful of easy steps, this dish is a must-try for pasta lovers!

Ingredients

  • 10 oz cheese tortellini (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach (or basil leaves)
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the tortellini: Follow package instructions to cook the tortellini. Drain and set aside.
  2. Sauté garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add tomatoes: Add the halved cherry tomatoes and cook for 3-4 minutes until softened and beginning to burst.
  4. Make the sauce: Pour in the heavy cream, then stir in Italian seasoning, salt, and black pepper. Let the sauce simmer for 2-3 minutes.
  5. Combine tortellini and sauce: Add the cooked tortellini to the skillet and toss to coat in the sauce. Stir in Parmesan cheese and fresh spinach, allowing the spinach to wilt.
  6. Serve: Remove from heat and garnish with fresh basil leaves. Serve warm and enjoy!

Notes

  • Substitutes: Swap spinach for basil for a fragrant twist, or add cooked chicken or shrimp for extra protein. Use dairy-free cream or cheese for a dairy-free version.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of cream or milk.
