Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs

- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
For the Caramel Topping:
- 1 cup caramel sauce
- 1/4 cup heavy cream

Instructions
- Preheat the oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, allowing for an overhang on the sides for easy removal.
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan to form an even crust. Bake for 8 minutes, then remove and cool slightly.
- In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
- Pour the cheesecake mixture over the pre-baked crust and smooth the top. Bake for 30-35 minutes until the center is set but slightly jiggles when shaken.
- Turn off the oven and let the bars cool with the oven door slightly ajar for 1 hour.
- Refrigerate for at least 4 hours (or overnight) to allow the bars to set fully.
