Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Caramel Topping:

  • 1 cup caramel sauce
  • 1/4 cup heavy cream
  • Sea salt for sprinkling (optional)

Instructions

  • Preheat the oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper, allowing for an overhang on the sides for easy removal.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan to form an even crust. Bake for 8 minutes, then remove and cool slightly.
  • In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  • Pour the cheesecake mixture over the pre-baked crust and smooth the top. Bake for 30-35 minutes until the center is set but slightly jiggles when shaken.
  • Turn off the oven and let the bars cool with the oven door slightly ajar for 1 hour.
  • Refrigerate for at least 4 hours (or overnight) to allow the bars to set fully.
  • For the caramel topping, heat the caramel sauce and heavy cream in a saucepan over low heat, stirring until smooth. Pour over the chilled cheesecake and sprinkle with sea salt if desired.
  • Lift the bars out of the pan using the parchment paper and cut into squares.
