For the Orange Coconut Cream:

  • 1 cup raw unsalted cashews (soaked for 23 hours, drained)
  • 1 cup shredded unsweetened coconut
  • ½ cup freshly squeezed orange juice
  • ½ teaspoon vanilla extract
  • Pure maple syrup (optional, to taste)

For Garnish:

  • Orange zest
  • Shredded coconut
  • Sea salt

Instructions

  1. Prepare the Orange Coconut Cream:
    • Blend soaked cashews, shredded coconut, orange juice, and vanilla extract until smooth.
    • Taste and add maple syrup if desired for extra sweetness.
  2. Stuff the Dates:
    • Carefully slit each date lengthwise and remove the pit.
