Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies, undrained
- 1 cup chicken broth
- 1 cup corn (frozen or canned, drained)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp smoked paprika (optional)
- ½ tsp dried oregano
- Salt and black pepper, to taste
- Juice of 1 lemon
Optional Garnishes:
- Crumbled feta cheese
- Chopped fresh parsley
- Sliced olives
Instructions
- Prepare the Crockpot: Place the chicken breasts at the bottom. Add beans, diced tomatoes, corn, onion, and garlic.
- Add Seasonings: Sprinkle cumin, paprika, oregano, salt, and black pepper. Pour in the chicken broth.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
- Shred Chicken: Remove chicken, shred with two forks, and return it to the crockpot.
- Add Lemon Juice: Stir in fresh lemon juice for a Mediterranean touch.
- Serve: Ladle into bowls, garnish with feta, parsley, or olives, and enjoy!
