Description

Crockpot Mediterranean White Chicken Chili is a fusion of creamy white chicken chili and Mediterranean flavors. This slow-cooked dish features tender chicken, white beans, and spices, enhanced with lemon juice, feta, and parsley. Perfect for an easy, nutritious meal!


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies, undrained
  • 1 cup chicken broth
  • 1 cup corn (frozen or canned, drained)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional)
  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • Juice of 1 lemon

Optional Garnishes:

  • Crumbled feta cheese
  • Chopped fresh parsley
  • Sliced olives

Instructions

  • Prepare the Crockpot: Place the chicken breasts at the bottom. Add beans, diced tomatoes, corn, onion, and garlic.
  • Add Seasonings: Sprinkle cumin, paprika, oregano, salt, and black pepper. Pour in the chicken broth.
  • Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  • Shred Chicken: Remove chicken, shred with two forks, and return it to the crockpot.
  • Add Lemon Juice: Stir in fresh lemon juice for a Mediterranean touch.
  • Serve: Ladle into bowls, garnish with feta, parsley, or olives, and enjoy!
