Ingredients
- 2 medium zucchinis, thinly sliced
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Olive oil spray
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a small bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Slice zucchini into thin rounds, about 1/8 inch thick, and pat dry with paper towels.
- Lightly spray both sides of the zucchini slices with olive oil spray.
- Press each zucchini slice into the breadcrumb mixture to coat evenly.
- Arrange coated slices in a single layer in the air fryer basket without overlapping.
- Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
- Serve immediately with your favorite dipping sauce.
