Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • 5 tbsp unsalted butter, melted

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup heavy cream
  • 1 tbsp cornstarch

For the Topping:

  • ¼ cup granulated sugar (for caramelizing)

Instructions

  • Preheat the Oven:

    • Preheat to 325°F (163°C).
    • Line a 9×9-inch baking dish with parchment paper.
  • Prepare the Crust:

    • Mix graham cracker crumbs, sugar, and melted butter in a bowl.
    • Press firmly into the baking dish.
  • Make the Cheesecake Filling:

    • Beat softened cream cheese until smooth.
    • Add sugar and mix until combined.
    • Beat in eggs one at a time.
    • Stir in vanilla extract, heavy cream, and cornstarch.
  • Bake:

    • Pour the cheesecake filling over the crust.
    • Bake for 30-35 minutes, until the center is set but slightly jiggly.
  • Cool and Chill:

    • Let it cool to room temperature.
    • Refrigerate for at least 4 hours (or overnight).
  • Caramelize the Sugar:

    • Sprinkle sugar evenly over the cheesecake.
    • Use a kitchen torch to caramelize until golden brown.
    • If using a broiler, watch closely to prevent burning.
  • Serve:

    • Let the caramelized sugar cool and harden.
