Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- 2 tbsp granulated sugar
- 5 tbsp unsalted butter, melted

- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup heavy cream
- 1 tbsp cornstarch
For the Topping:
- ¼ cup granulated sugar (for caramelizing)

Preheat the Oven:
- Preheat to 325°F (163°C).
- Line a 9×9-inch baking dish with parchment paper.

Prepare the Crust:
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press firmly into the baking dish.

Make the Cheesecake Filling:
- Beat softened cream cheese until smooth.
- Add sugar and mix until combined.
- Beat in eggs one at a time.
- Stir in vanilla extract, heavy cream, and cornstarch.

- Pour the cheesecake filling over the crust.
- Bake for 30-35 minutes, until the center is set but slightly jiggly.

Cool and Chill:
- Let it cool to room temperature.
- Refrigerate for at least 4 hours (or overnight).

- Sprinkle sugar evenly over the cheesecake.
- Use a kitchen torch to caramelize until golden brown.
