Ingredients
- 2 tbsp oil from sun-dried tomatoes (or olive oil)
- 1 lb spicy Italian chicken sausage , casing removed
- 1 onion, chopped
- 2 shallots, minced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 tsp Italian seasoning
- 4 cups chicken or vegetable broth
- 2 cans (15 oz) white beans, drained and rinsed
- 4 cups baby spinach
- 1 cup cream or whole milk
- 1/2 cup Parmesan cheese, grated
- Zest and juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté Aromatics – Heat olive oil over medium heat in a large pot or Dutch oven. Add onion, shallot, carrots, and celery. Cook for 5-7 minutes until softened.
- Add Garlic and Herbs – Stir in minced garlic, rosemary, thyme, oregano, and bay leaves. Cook for 1-2 minutes until fragrant.
- Add Beans and Broth – Stir in the white beans and pour in the broth. Bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.
- Blend for Creaminess – Remove 2 cups of soup (excluding bay leaves) and blend until smooth. Pour back into the pot.
- Season and Add Greens – Remove bay leaves, season with salt and pepper, and add spinach or kale. Simmer for 5-10 more minutes until greens are tender.
- Serve – Ladle into bowls, top with grated Parmigiano cheese and red pepper flakes if desired. Serve with crusty bread.
