Description

Ingredients

  • 2 tbsp oil from sun-dried tomatoes (or olive oil)
  • 1 lb spicy Italian chicken sausage , casing removed
  • 1 onion, chopped
  • 2 shallots, minced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 tsp Italian seasoning
  • 4 cups chicken or vegetable broth
  • 2 cans (15 oz) white beans, drained and rinsed
  • 4 cups baby spinach
  • 1 cup cream or whole milk
  • 1/2 cup Parmesan cheese, grated
  • Zest and juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté Aromatics – Heat olive oil over medium heat in a large pot or Dutch oven. Add onion, shallot, carrots, and celery. Cook for 5-7 minutes until softened.
  2. Add Garlic and Herbs – Stir in minced garlic, rosemary, thyme, oregano, and bay leaves. Cook for 1-2 minutes until fragrant.
  3. Add Beans and Broth – Stir in the white beans and pour in the broth. Bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.
  4. Blend for Creaminess – Remove 2 cups of soup (excluding bay leaves) and blend until smooth. Pour back into the pot.
  5. Season and Add Greens – Remove bay leaves, season with salt and pepper, and add spinach or kale. Simmer for 5-10 more minutes until greens are tender.
  6. Serve – Ladle into bowls, top with grated Parmigiano cheese and red pepper flakes if desired. Serve with crusty bread.
