Ingredients
For the Salmon:

- 1/4 cup mozzarella cheese, shredded
- 1 garlic clove, minced

For the Sauce:
- 2 tablespoons butter
- 1 garlic clove, minced
- 1 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
- In a bowl, mix sautéed spinach, cream cheese, mozzarella, minced garlic, salt, and pepper.
- Cut a pocket into each salmon fillet and stuff with the prepared filling. Arrange the fillets in the baking dish.
- Heat olive oil in a skillet over medium heat. Sear the salmon for 2-3 minutes per side until lightly golden. Transfer to the oven and bake for 10-12 minutes until fully cooked.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in heavy cream, Parmesan, and lemon juice. Season with salt and pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.
- Pour the garlic cream sauce over the baked salmon. Serve immediately with fresh parsley and lemon wedges.
