Ingredients

For the Salmon:

  • 4 salmon fillets (skinless)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

For the Filling:

  • 2 cups fresh spinach, sautéed
  • 1/2 cup cream cheese, softened
  • 1/4 cup mozzarella cheese, shredded
  • 1 garlic clove, minced
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon lemon juice

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
  • In a bowl, mix sautéed spinach, cream cheese, mozzarella, minced garlic, salt, and pepper.
  • Cut a pocket into each salmon fillet and stuff with the prepared filling. Arrange the fillets in the baking dish.
  • Heat olive oil in a skillet over medium heat. Sear the salmon for 2-3 minutes per side until lightly golden. Transfer to the oven and bake for 10-12 minutes until fully cooked.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in heavy cream, Parmesan, and lemon juice. Season with salt and pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.
  • Pour the garlic cream sauce over the baked salmon. Serve immediately with fresh parsley and lemon wedges.
