Ingredients
For the dough:
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 1 large egg
- 1/2 tsp baking powder
- Pinch of salt
For the ricotta filling:
- 1 cup ricotta cheese
- 2 tbsp powdered sugar
- 1/4 tsp vanilla extract
For topping:
- Sliced almonds
- Powdered sugar for dusting
Instructions
- Preheat Oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare Dough: In a bowl, mix almond flour, sugar, butter, almond extract, vanilla extract, egg, baking powder, and salt until dough forms.
- Prepare Filling: Blend ricotta, powdered sugar, and vanilla extract in a separate bowl until smooth.
- Assemble Pillows: Flatten spoonfuls of dough, add a teaspoon of filling, and seal edges to form pillows.
- Top & Bake: Arrange on the sheet, top with sliced almonds, and bake for 18-20 minutes.
- Cool & Serve: Let cool, then dust with powdered sugar.
Notes
- For a citrus twist, add zest to the filling.
- Dough too sticky? Chill for 15-20 minutes before use.
- Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the fridge.
