Description

Creamy Ricotta Almond Pillows are the ultimate gluten-free dessert, featuring a tender almond flour dough filled with luscious ricotta, topped with crunchy sliced almonds, and a dusting of powdered sugar. Perfect for any occasion!

 


Ingredients

For the dough:

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1/2 tsp baking powder
  • Pinch of salt

For the ricotta filling:

  • 1 cup ricotta cheese
  • 2 tbsp powdered sugar
  • 1/4 tsp vanilla extract

For topping:

  • Sliced almonds
  • Powdered sugar for dusting

Instructions

  • Preheat Oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  • Prepare Dough: In a bowl, mix almond flour, sugar, butter, almond extract, vanilla extract, egg, baking powder, and salt until dough forms.
  • Prepare Filling: Blend ricotta, powdered sugar, and vanilla extract in a separate bowl until smooth.
  • Assemble Pillows: Flatten spoonfuls of dough, add a teaspoon of filling, and seal edges to form pillows.
  • Top & Bake: Arrange on the sheet, top with sliced almonds, and bake for 18-20 minutes.
  • Cool & Serve: Let cool, then dust with powdered sugar.

Notes

  • For a citrus twist, add zest to the filling.
  • Dough too sticky? Chill for 15-20 minutes before use.
  • Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the fridge.
