Description

Creamy Ranch Chicken with Rice and Peas is a family-friendly, comforting dinner recipe featuring tender chicken breasts in a homemade creamy ranch sauce, served over fluffy rice with vibrant green peas. This easy, flavorful dish is perfect for busy weeknights.

Ingredients

For the Chicken:

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Creamy Ranch Sauce:

  • 1 tablespoon unsalted butter
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

For the Sides:

  • 2 cups cooked rice
  • 1 1/2 cups green peas (steamed or boiled)

Instructions

  1. Prepare the Chicken:
    • Season chicken breasts with salt and pepper.
    • Heat olive oil in a skillet over medium heat.
    • Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  2. Make the Sauce:
    • Melt butter in the same skillet.
    • Sauté minced garlic until fragrant, about 1 minute.
  3. Deglaze the Skillet:
    • Add chicken broth, scraping up any browned bits. Let simmer for 2 minutes.
  4. Create Creamy Sauce:
    • Stir in heavy cream, parsley, dill, onion powder, and garlic powder. Simmer 2–3 minutes until sauce thickens. Adjust seasoning as needed.
  5. Combine and Simmer:
    • Return chicken to skillet and spoon sauce over it. Simmer for 2 minutes to heat through.
  6. Serve:
    • Plate chicken over rice, add steamed peas on the side, and drizzle with creamy ranch sauce.

Notes

  • Swap vegetables like broccoli or carrots for peas for variety.
  • Use cauliflower rice for a low-carb option.
  • Add red pepper flakes to the sauce for a spicy kick.
