Ingredients

  • 1 cup long-grain white rice
  • 2 1/2 cups whole milk (or dairy-free alternative)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins (optional)

Instructions

  • Rinse the rice under cold water and drain.
  • In a medium saucepan, combine rice and milk. Bring to a boil over medium heat.
  • Reduce heat to low and simmer uncovered for 30-35 minutes, stirring occasionally, until the rice is tender and the mixture thickens.
  • Stir in granulated sugar, brown sugar, salt, cinnamon, and nutmeg. Cook for an additional 5 minutes, stirring frequently.
  • Gradually stir in the beaten egg and cook for 2-3 minutes until the pudding thickens further.
  • Remove from heat, stir in vanilla extract and optional raisins.
  • Serve warm or chilled as desired.
