Ingredients
2 chicken breasts, boneless and skinless
2 tablespoons olive oil
Salt and pepper, to taste
4 cloves garlic, minced
1 cup heavy cream
1 cup milk
1 cup grated Parmesan cheese
1 tablespoon butter
2 cups broccoli florets, steamed
12 oz fettuccine pasta, cooked
Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Season both sides of the chicken breasts with salt and pepper.
- Cook the chicken for 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside. Once cooled, slice the chicken into thin strips.
- In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes, stirring frequently until fragrant.
- Add the heavy cream and milk to the skillet, whisking to combine. Bring the mixture to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
- Stir in the grated Parmesan cheese until melted and smooth, creating a creamy sauce.
- Add the cooked fettuccine pasta and steamed broccoli into the skillet, tossing to coat everything in the sauce.
- Gently stir in the sliced chicken and cook for an additional 1-2 minutes until heated through.
- Serve immediately, garnished with fresh parsley if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
To reheat, gently warm on the stove over low heat, adding a splash of milk or cream. Alternatively, microwave and stir every 30 seconds to ensure even heating.
Frozen broccoli can be used as a substitute for fresh. Just steam it before adding.
If you prefer a lighter version, you can substitute the heavy cream with half-and-half or a milk-flour mixture.
You can swap chicken for shrimp or tofu for a different protein option.
