Ingredients
- 2 Boneless, skinless chicken breasts, cubed
- 2 tbsp Cajun seasoning
- Salt and black pepper, to taste
- 1 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 cup Heavy cream
- 1/2 cup Chicken broth
- 1/2 cup Grated Parmesan cheese
- 8 oz Fettuccine pasta
- Fresh parsley, chopped (for garnish)
Instructions
-
Cook the Pasta: Prepare the fettuccine according to package directions until al dente. Drain and set aside.
-
Season the Chicken: Season the cubed chicken with Cajun seasoning, salt, and black pepper.
-
Cook the Chicken: Heat olive oil over medium heat in a large skillet. Add the seasoned chicken and cook until golden brown and fully cooked, about 5-6 minutes. Remove the chicken from the skillet and set aside.
-
Sauté the Garlic: In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
-
Make the Sauce: Pour in the chicken broth and heavy cream, stirring well to combine. Add the Parmesan cheese and stir until the sauce becomes smooth and creamy. Let it simmer for 2-3 minutes until it thickens slightly.
-
Combine Chicken and Pasta: Return the cooked chicken to the skillet, then add the cooked fettuccine. Toss everything together until the pasta is coated in the creamy sauce.
-
Serve: Garnish with fresh parsley and serve warm.
Notes
- Make it Spicier: Add more Cajun seasoning or a pinch of red pepper flakes for an extra kick.
- Veggies: You can add bell peppers, spinach, or mushrooms for extra flavor and nutrition.
- Protein Options: Swap chicken for shrimp, sausage, or even tofu for a different twist.
- Lighten it Up: Use half-and-half instead of heavy cream or opt for a lighter cheese option.
