Ingredients

  • 40 saltine crackers (1 package)
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups chocolate chips (about 1 package)

Instructions

  • Preheat the oven to 350°F. Line a 9×13-inch baking sheet with parchment paper or foil and spray with non-stick cooking spray.
  • Arrange the saltine crackers in a single layer on the baking sheet. Break them in half if needed to fill the entire pan.
  • In a small pot, melt the butter over medium-high heat. Once melted, add the brown sugar and stir. Bring the mixture to a boil and cook for 3 minutes without stirring.
  • Remove the pot from heat and stir in the vanilla extract.
  • Pour the toffee mixture over the saltine crackers, spreading it evenly with a spatula.
  • Bake in the oven for 5-7 minutes. Remove and let it cool for 1-2 minutes.
  • Sprinkle the chocolate chips over the toffee. Return the pan to the oven (turned off) for 30-60 seconds to melt the chocolate.
  • Spread the melted chocolate evenly over the crackers with a spatula.
  • Let the candy cool for 20 minutes, then refrigerate for 3-4 hours to set.
  • Once chilled, break or cut into squares and enjoy!
