Ingredients

  • 2 eggs
  • 2/3 cup milk
  • 32 Ritz crackers, crushed
  • 1/2 cup chopped onion
  • 4 oz shredded sharp cheddar cheese
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs ground beef
  • Glaze:
    • 1/2 cup ketchup
    • 1/2 cup brown sugar
    • 1 tsp mustard

Instructions

  • Preheat oven to 350°F.
  • Mix Wet Ingredients: In a large bowl, beat the eggs, then add milk and crushed Ritz crackers.
  • Combine Ingredients: Stir in chopped onion, shredded cheddar cheese, ground beef, salt, and pepper. Mix well.
  • Shape & Bake: Form into a loaf and place in a greased baking dish. Bake for 45 minutes.
  • Prepare the Glaze: In a small bowl, mix ketchup, brown sugar, and mustard.
  • Glaze the Meatloaf: After 30 minutes, remove meatloaf and spread half the glaze over the top. Return to oven for another 10 minutes.
  • Final Glaze: Add remaining glaze and bake for 5-10 more minutes until caramelized.
  • Rest & Serve: Let sit for a few minutes before slicing.
