Description

Cowboy Casserole is a comforting, one-pan dish made with ground beef, creamy mushroom soup, corn, green beans, and crispy tater tots, topped with melted cheddar cheese. Perfect for busy weeknights, potlucks, or make-ahead meals, this easy recipe is family-friendly, customizable, and absolutely delicious!

Ingredients

  • 1 pound ground beef or sausage
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (15 ounces) sweet corn, drained
  • 1 can (15 ounces) green beans, drained
  • Salt and pepper to taste
  • 1 package (32 ounces) frozen tater tots
  • 1½ cups shredded cheddar cheese

Instructions

  • Preheat Oven: Set your oven to 350°F (175°C).
  • Cook Meat: In a large skillet over medium heat, brown the ground beef or sausage, breaking it apart. Drain excess fat.
  • Combine Ingredients: Mix in the cream of mushroom soup, drained corn, and green beans. Season with salt and pepper.
  • Assemble Casserole: Spread the mixture evenly in a greased 9×13-inch casserole dish. Arrange tater tots in a single layer on top.
  • Bake: Place in the oven and bake for 25–30 minutes until the tater tots are crispy and golden brown.
  • Add Cheese: Sprinkle shredded cheddar cheese over the top and bake for another 5 minutes until melted.
  • Serve: Let it cool for a few minutes before serving. Enjoy!

Notes

  • Add jalapeños or chili powder for a spicy twist.
  • Swap green beans for peas or bell peppers for variety.
  • Use Monterey Jack, Colby, or a cheese blend instead of cheddar.
  • Top with crispy fried onions or crushed tortilla chips for extra crunch.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
