Ingredients

  • 1 cup 2% cottage cheese
  • 2 tablespoons maple syrup (sugar-free syrup can be used)
  • 1 teaspoon pure vanilla extract
  • 1½ cups almond flour (or heat-treated all-purpose flour)
  • ½ cup vanilla protein powder
  • ½ cup chocolate chips, divided (sugar-free options available)
  • 1 teaspoon coconut oil

Instructions

  • In a blender or food processor, blend cottage cheese, maple syrup, and vanilla extract until smooth.
  • Transfer the mixture to a bowl; stir in almond flour, protein powder, and half of the chocolate chips to form a dough.
  • Refrigerate dough for 30 minutes to firm up.
  • Line a baking sheet with parchment paper.
  • Scoop or spoon portions of dough, rolling into balls; place them on the baking sheet.
  • Freeze the balls for at least 20 minutes.
  • In a microwave-safe bowl, melt the remaining chocolate chips with coconut oil in 15-second intervals, stirring until smooth.
  • Dip each protein ball into melted chocolate, coating completely. Return to the parchment-lined sheet.
  • Refrigerate until the chocolate hardens.
