Instructions

- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
- Add the melted chocolate mixture and vanilla extract to the blended cottage cheese. Blend again until fully combined.
- Line a small square or rectangular pan with parchment paper, leaving some overhang for easy removal.
- Pour the fudge mixture into the prepared pan, spreading evenly with a spatula.
- Refrigerate for 2-3 hours or until firm.
- Lift the set fudge out of the pan using the parchment overhang. Place on a cutting board and cut into small squares.
