Ingredients

  • ¾ cup (180 g) cottage cheese
  • 1 large egg
  • ½ cup (45 g) cocoa powder
  • ⅓ cup (80 g) granular sweetener (e.g., monk fruit sweetener)
  • Optional:
    • ½ tsp baking powder
    • ½ tsp coffee powder
    • Pinch of salt
    • Chocolate chips for topping

Instructions

  • Preheat your oven to 350°F (180°C). Line a 7-inch (15 cm) square brownie pan with parchment paper.
  • Blend cottage cheese, egg, cocoa powder, and sweetener in a blender until smooth. Add optional baking powder, coffee powder, and salt for extra flavor and texture.
  • Pour the smooth batter into the prepared pan. Sprinkle chocolate chips on top, if desired.
  • Bake for 22 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to cool completely at room temperature before slicing. Enjoy!
