Description
A light and protein-rich soufflé made with cottage cheese and Greek yogurt, perfect for a gluten-free, grain-free, sugar-free, and low-carb treat. Enjoy it for breakfast, as a snack, or as a healthy dessert!
Ingredients
- 2 dl (200 ml) cottage cheese
- 2 eggs
- 1 dl (100 ml) Greek yogurt or quark
- 6–7 drops vanilla stevia drops or vanilla extract
- 1–2 teaspoons sweetener (optional)
Instructions
- Preheat the oven to 200°C (392°F).
- In a bowl or blender, combine all the ingredients and mix until smooth.
- Divide the mixture between two oven-safe bowls.
- Bake in the upper part of the oven for 14-18 minutes until golden brown, set on the edges, but still slightly wobbly in the middle. Avoid overbaking to prevent dryness.
- Serve warm with fruits, berries, jam, or your favorite topping.
Notes
- To keep it completely sugar-free, use stevia or erythritol as a sweetener.
- For an extra creamy texture, blend the mixture well.
- Pairs wonderfully with fresh berries, sugar-free syrups, or a drizzle of honey (if not strictly low-carb).
